Frozen artichoke cores are stewed for a few minutes in a small amount of water and white wine together with onions, garlic and tomatoes, until tender, and all tastes mix. In a pan with 1 tbsp. l fry half the finely chopped onion, 2 chopped cloves of garlic and a pinch of salt, 5 minutes. Pour in 0.5 tbsp. white wine and evaporate half. Add 2 chopped tomatoes, two packets of 250 g. frozen artichoke cores, 3 tbsp. l water, 1 strip of lemon peel and 0.5 tsp. salt. Stew with a lid for 6 minutes. Add chopped olives, basil, salt and black pepper to taste.
