A delicious tomato cream soup is prepared in literally 20 minutes and contains only three ingredients. All you need is a ready-made chicken or vegetable broth (homemade or purchased), a can of canned grated tomatoes and fat cream. Everything is mixed in a saucepan and cooked for several minutes to make the taste saturated, and then the soup is whipped with a blender to a uniform consistency. Serve as an appetizer, sprinkled with fresh basil and garnished with a serving of crispy garlic croutons with viscous cheese. Their recipe is also presented below.

The recipes use volumetric containers with the volume:
1 cup (st.) – 240 ml.
3/4 cup (st.) – 180 ml.
1/2 cup (tbsp.) – 120 ml.
1/3 cup (st.) – 80 ml.
1/4 cup (st.) – 60 ml.
1 tablespoon (tbsp.) – 15 ml.
1 teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

Soup

  • 2 packs of 450 ml. chicken or vegetable stock
  • 1 can (800 gr.) Canned concentrated grated tomatoes
  • 1 tbsp. fat cream
  • 20 thinly sliced ​​fresh basil leaves for serving
  • Croutons for serving, see recipe below

Toast

  • 4 slices of rustic bread with a crust 10 cm wide, 0.5 cm thick.
  • 2 chopped cloves of garlic, optional
  • Extra virgin olive oil
  • 220 gr grated cheese, for example, provolone, Asiago, cheddar, gruyere, Swiss, etc.



Recipe preparation:

  1. In a medium-sized saucepan, mix the broth and tomatoes and heat over medium heat. When the soup boils, stir in the heavy cream and reduce the heat to a minimum. Season with salt and pepper to taste and cook at low boil, stirring occasionally, 15 minutes.
  2. Beat the soup with a hand blender. Serve in deep plates, sprinkled with basil and garnished with croutons.

    Garlic croutons with cheese:

    Fry slices of bread in a toaster until golden brown. Rub the toasted chopped garlic if you use it. Lay bread on a baking sheet. Sprinkle each slice with extra virgin olive oil, and sprinkle black pepper and grated cheese on top. Put in the oven and fry in grill mode until the cheese is melted and the croutons are browned.
