In a large pot with a thick bottom, heat the olive oil. Add onions, sweet peppers, carrots and 1/2 tsp. salt, fry over moderate heat, stirring, until half cooked, about 8 minutes. Add garlic and cook another 2 minutes.

Add hot chili powder, cumin, coriander, oregano, chipotle peppers, tomato paste and tortilla, cook, stirring until the tomato paste turns red-brown, about 4 minutes.

If the mixture begins to stick, add a little water. Then pour in coffee and simmer, for about 30 seconds. Stir in tomatoes, cocoa powder, beans, 2.5 tbsp. water and bring to a boil.

Reduce heat and simmer over low heat, stirring occasionally, until thickened, about 1 hour 30 minutes.
