Skewers of chicken hearts are incredibly tasty and juicy and they are cooked very quickly. This dish is very easy to cook in the beginning barbecue parties and to serve as an “aperitif”.


  • Chicken hearts — 500 g.
  • Soy sauce — 100 gr.
  • Lime — 2 PCs. (or lemon — 1 PC.)
  • Provencal herbs — 1 tsp
  • Vegetable oil — 1 tbsp
  • Black pepper — to taste


1. Make a marinade. Squeeze the juice of lime or lemon, mix it with soy sauce, vegetable oil and herbs de Provence. If you want to enhance the citrus flavor, RUB a bit of zest and add to the marinade. Salt to add is not required because soy sauce and enough salt.

2. Hearts rinse and if necessary sand, but don’t cut all the fat while cooking on the grill it will melt and will flow out, but will give the dish the necessary richness.

3. Dip the hearts in marinade, stir, cover, and leave overnight in the fridge. If cooking time is limited, put the hearts with the marinade in a plastic bag and leave to marinate at room temperature, periodically stirring the contents of the package.

4. Soak wooden skewers in cold water for 15 minutes, then tight string on their hearts. For convenience, threaded on skewers, the skewers can be placed in the grill.

5. Fry hearts on the grill 10-15 minutes, turning occasionally.

6. Ready kebabs to shift on a dish, top, sprinkle with ground black pepper.

  • Stripping chicken hearts are very convenient to use the knife for cleaning of vegetables and fruits.
  • If you leave the hearts in the marinade overnight, use a plastic container with a tight lid or enamel bowl. When using stainless steel cookware make sure that the inner surface had no scratches and defects.
  • Chicken hearts can be prepared in standard steel skewers, but you need to string them very tight, and closely monitor that they do not dry.
