Number of servings: 12-14


For muffin:

  • Flour — 3 cups
  • Milk powder — ¼ Cup
  • Yeast — 1 tsp
  • Sugar — 2 tsp
  • Salt — 1 tsp
  • Egg — 3 PCs. (+1-2 yolks)
  • Butter — 120 gr.
  • Water — 3-4 tbsp
  • Sesame seeds or a mixture for dusting

For the filling:

  • Red onion — 1 PC.
  • Mixed salad — 1 pkg.
  • Large tomato — 1 PC.
  • Cheddar cheese orange sliced — 1 pkg.
  • Ribeye steak (if you wish, you can substitute more lean kind of meat, or pork steak) – 500 gr.
  • Shallots — 200 gr.
  • Orange — 0.5 kg
  • Lime 0.5 kg
  • Salt — 1 tbsp
  • Olive oil — 50 ml
  • Dried Basil, oregano, cumin, ginger, cinnamon, allspice, black pepper, wig, Chile pepper, nutmeg, salt to taste (for the marinade).

For the sauce:

  • Roasted pumpkin seeds — 100 gr.
  • Honey — 1 tsp
  • Lemon juice — 1 tsp
  • Salt — 3 gr.
  • Coriander — 150 gr.
  • Dijon mustard — 1 tsp.
  • Water — 150 ml
  • White and pink pepper — to taste

Bake the buns:

1. If you trust the process technique, the dough will not bring a lot of trouble. Put all the ingredients into the bowl of the planetary mixer or food processor and thoroughly combine. If you use a bread machine, place device on the program “dough”. During the preparation of the dough, if necessary you can add a little more water or flour.

2. If the dough you are not using a bread machine, then leave it to rise in a warm place for about 1 hour.

3. Ready divide the dough into pieces weighing 120-150 gr. with the help of kitchen scales. From each piece to form a round bun. Leave the buns for proofing on the baking sheet for 15 min.

4. Whisk the yolks, if desired, add a little melted butter. Coat the rolls with a brush. Sprinkle buns with sesame seeds or a mixture for dusting.

5. Bake the buns in the oven at 190 degrees for 20-25 minutes. After this time remove them from the oven, cover with a clean towel and let cool.

Toppings for Burger:

1. Prepare a marinade from a mixture of spices, juice of oranges and limes, olive oil and whipped to a paste in a blender shallot. In the resulting marinade marinade for whole ribeye steak for 1 hour at room temperature.

2. Marinated steak fry on the grill pan until cooked, then remove to a plate, cover with foil and give “rest” for 10-15 min.

3. With a sharp knife cut the steak into slices with a thickness of 3-5 mm.

4. Cut into thin slices tomato and red onion.

The sauce for the Burger:

1. All the ingredients for the sauce put in blender and whisk until smooth.

Assemble the Burger:

1. Carefully cut the bun into 2 halves with each with the inner side of melted butter with a brush and lightly fry on a hot dry pan.

2. Grease each half of the buns with the inner side of sauce, then a floor lay out meat slices, Cheddar cheese, slices of tomato and onion, lettuce. Cover with the other half of Burger buns.
