Pinto beans, stewed in a slow cooker with smoked pork knuckle, are filled with a fabulous aroma of smoke and the taste of spices and will be the perfect side dish for your dishes. It can be served with any meat or just like that with pieces of shank, wrapped in tortilla to make a hearty burrito or served with corn bread to dunk and enjoy. Before loading the ingredients into the slow cooker, you need to soak the beans and pork knuckle for several hours (preferably overnight) in water, so plan your cooking in advance.

Recipes use volumetric containers with a volume of:
1 cup (st.) – 240 ml.
3/4 cup (st.) – 180 ml.
1/2 cup (tbsp.) – 120 ml.
1/3 cup (st.) – 80 ml.
1/4 cup (st.) – 60 ml.
1 tablespoon (tbsp.) – 15 ml.
1 teaspoon (tsp) – 5 ml.

Ingredients for the recipe:


  • 450 gr dry pinto beans
  • 1 tsp chili powder
  • 0.5 tsp dried oregano
  • 220 gr smoked pork shank or 110 gr. deep fried fat
  • 4 tbsp. water
  • 1 onion, chopped

Homemade seasoning

  • 1 tbsp. salt
  • 1/4 Art. black pepper
  • 1/4 Art. garlic powder

Recipe preparation:

  1. Wash the beans and soak overnight in cold water. Drain the beans and pour them into the slow cooker. Add chili and oregano powder.
  2. If using a shank, pre-soak it in a separate pan for at least 2 hours, or refrigerate it for up to 24 hours, depending on how salty you want your broth to be. Put the shank in a slow cooker with beans and pour in the liquid in which it was soaked. If necessary, add more water to completely cover the shank.

    If you use deep-fried lard, cut it into cubes, fry in a pan and transfer it with melted fat to a slow cooker with beans. Add 4 tbsp. water.

  3. Add onions to the slow cooker with beans and meat. Mix well. Sprinkle with homemade seasoning to taste, cover the slow cooker with a lid and cook with high heat until the beans are very soft, about 5 hours.

    Homemade seasoning:

    Combine all ingredients and store in airtight containers for up to 6 months.

    Output: 1.5 tbsp.
