I present to you a recipe for Brazilian beef soup with caraway seeds. It is traditionally prepared from young beef and the process is somewhat different from how we used to do it. Here, the meat is initially fried in butter with a onion, and only then the process of preparing the soup begins.
- Blowing beef – 600 g.
- Butter – 30 g.
- Onions – 2 pcs.
- Potato – 400 g.
- Salt – 1 tsp
- Caraway seeds – 1 tsp
- Grated lemon zest – 1 tsp
- Mashed Tomato – 15 g.
- Garlic Slices – 2 pcs.
- Sour cream – 200 g.
- Ground black pepper – to taste
To begin with, cut the beef into several large pieces, clean off the hymen, if any, then cut into cubes one and a half two centimeters. Melt the butter in a pan and fry the meat well from all sides.
Peel and julienne the onion. Add to the pan with fried mas, cook for about 3 minutes.
In a pan, draw 2 liters of water, put a little salt 1/2 teaspoon, and bring to a boil. Then pour the meat into the water and cook for half an hour.
Meanwhile, prepare the potatoes: wash, peel and cut into not very large pieces. Once half an hour has passed, put the potatoes and the remaining salt in the pan.
Then add caraway seeds and lemon zest, cook until potatoes and meat are fully cooked.
After all the ingredients are cooked, add the tomato paste and finely chopped garlic.
After a minute, turn it off, cover and leave for an hour or a half. He must insist and garlic, meanwhile, will give its flavor.
Pour into plates, be sure to add a spoonful of sour cream, sprinkle with herbs and serve.
