  • salmon fillets

for sauce:

  • Dijon mustard

  • wine vinegar
    2 tbsp
  • sour cream
    1 tbsp
  • olive oil
    3 tsp
  • dill
    1-2 tsp
  • honey
    1-2 tsp
  • ground black pepper
  • lemon zest
  • salt

Cooking:

  • Pour pepper, mustard, sugar, salt, juniper into a mortar, mash everything well with a pestle and mix. Dry the prepared fillet, coat with the resulting mixture of spices, sprinkle with mint and dill, pour lemon juice, drizzle with oil.
  • Fold the fillet halves together, wrap it in a foil, transfer it to a suitable tray in size, press it with a load, send it to the refrigerator for about two days.
  • Prepare the sauce by mixing all the ingredients. Take out the tray, free the fish from the film, cut the homemade salted salmon with mustard and dill sauce obliquely into pieces, arrange it on a flat dish, in the center of which put a bowl with sauce.

Tip

A knife for cutting fish should be very sharp, otherwise it’s not possible to cut fish into whole plates beautifully: they will crawl into shapeless pieces.
