Candied watermelon peels with lime - ReCiPes
Candied watermelon peels with lime

You can not throw away the peels from watermelons, but make delicious candied fruits out of them. Having cooked them in the summer, you can add them to desserts all winter, bake various muffins, bagels with them, and just eat them separately. Candied fruits are stored for a long time, if you make enough of them, you can experiment with desserts until next summer.

  • Peel the crusts from the remnants of pink pulp and green peel. You need to leave only the white pulp. Cut the pulp into pieces. Put the pieces in boiling water and cook for 5-7 minutes over moderate heat. Heat sugar and water, boil, remove foam and cook for 2 minutes. Pour the pieces of watermelon pulp into the syrup and add the lime zest there.
  • Boil and simmer for 5 minutes. Turn off the heat and leave to cool. Do not remove the pulp from the syrup. Thus, heat and cool the watermelon pulp in the syrup 4–5 times. Then squeeze the lime juice into the syrup and repeat the heating and cooling cycle 4–5 times.
  • Candied watermelon peels with lime are ready when the flesh is clear. Then put the candied fruit on baking paper and dry until firm. You can do this outdoors or in the oven at 50 degrees with the fan on.
