This dessert bread is another way to use zucchini tasty and unusual in the season of their harvest. Fresh zucchini are added to the dough in a grated form, fill the pastry with valuable dietary fiber and make it more juicy and soft. Together with pieces of semisweet chocolate and pecan, they become so harmoniously part of this sweet bread that you will not even feel the vegetables there. Cinnamon, nutmeg and orange zest fill the pastries with a magical spicy aroma. Serve chilled bread, garnished with whipped cream and ribbons of fresh zucchini, which can be cut with a regular peeler.

The recipes use volumetric containers with the volume:
1 cup (st.) – 240 ml.
3/4 cup (st.) – 180 ml.
1/2 cup (tbsp.) – 120 ml.
1/3 cup (st.) – 80 ml.
1/4 cup (st.) – 60 ml.
1 tablespoon (tbsp.) – 15 ml.
1 teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

  • 3 tbsp. premium flour
  • 0.5 tsp baking powder
  • 1 tsp salt
  • 0.5 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 1 tsp soda
  • 3 eggs
  • 2 tbsp. white sugar
  • 1 tbsp. vegetable oil
  • 2 tsp vanilla extract
  • 2 tbsp. grated zucchini
  • 1 tbsp. chopped pecans
  • 1 tbsp. semisweet chocolate granules
  • 1 tbsp. l orange zest
  • Whipped cream for serving
  • Zucchini ribbons for serving

Recipe preparation:

  1. Preheat the oven to 175 ° C. Oil two molds for bread measuring 22×12.5 cm.
  2. Sift together flour, baking powder, salt, spices and soda. In a large bowl, beat eggs until lush. Add sugar and continue whisking. Add vegetable oil, vanilla extract, zucchini, pecans, chocolate granules and orange zest. Add the sifted flour mixture. Put the dough in prepared bread pan.
  3. Bake for 50 minutes or until the wooden skewer inserted in the middle of the bread comes out clean. Put the loaves out of the molds and cool. Refrigerate before cutting. Serve with whipped cream and zucchini ribbons.
